Barefoot Bloggers -- Gazpacho

Though I typically love Ina's recipes, I wasn't sure about this gazpacho as I'm not a huge fan of raw, cold soups. Instead of using cucumber I used zucchini, just in case we didn't like the soup raw, I could cook it and perhaps use it as a topping for rice or pasta. No one was more surprised than I was when the soup turned out to be quite tasty. I don't think I could eat huge bowls of it as the raw onion is a bit strong, but it made a nice summer supper with some bread and a big bowl of pineapple.

  2. Yours looks fantastic, it has such deep red color! Mine was more muddled, but I used vegetable juice.

    I used V-8 for the juice, but I let it sit around for awhile so I think the soup turned a deeper color because my onions were a very deep purple.
