Though I typically love Ina's recipes, I wasn't sure about this gazpacho as I'm not a huge fan of raw, cold soups. Instead of using cucumber I used zucchini, just in case we didn't like the soup raw, I could cook it and perhaps use it as a topping for rice or pasta. No one was more surprised than I was when the soup turned out to be quite tasty. I don't think I could eat huge bowls of it as the raw onion is a bit strong, but it made a nice summer supper with some bread and a big bowl of pineapple.
Meryl, of My Bit of Earth, chose this yummy gazpacho, so please check out her blog for the recipe.

YUM. I love cold soups.
ReplyDeleteYours looks fantastic, it has such deep red color! Mine was more muddled, but I used vegetable juice.
ReplyDeleteMmmm, are those pumpkin seeds on top? Very good idea! I'll bet they added a nice crunch.
ReplyDeleteThanks for the comments.
ReplyDeleteI used V-8 for the juice, but I let it sit around for awhile so I think the soup turned a deeper color because my onions were a very deep purple.
Yes! Pumpkin seeds.
Gazpacho is one of my favorite summer dishes! I think it's about time to make the first batch of the season now... Thanks for reminding me!
