Barefoot Bloggers -- Bruschetta with Peppers

This month, the Barefoot Bloggers had a "Barefoot on a Budget" recipe selection. It was Ina's Bruschetta with Sauteed Sweet Peppers and Gorgonzola. It's a really nice recipe that's fast to make. Dave loved it; he thought it was "gourmet" food, though I'm not sure why since it seemed like a very basic recipe to me.

Instead of Gorgonzola, I used some shredded Asiago and some mashed chickpeas (I know, I know, chickpeas AGAIN). I love the taste of the sweet peppers on the crusty bread. Actually, I think I like just the peppers even better than the peppers plus the chesse. Anyway, this is a versatile recipe that you can change up any way you want to.

  2. Thank you Pamela! I have no idea why my photo is so blurry. It doesn't help that I do most of the cooking in the middle of the night and need to use a flash.
