Instead of Gorgonzola, I used some shredded Asiago and some mashed chickpeas (I know, I know, chickpeas AGAIN). I love the taste of the sweet peppers on the crusty bread. Actually, I think I like just the peppers even better than the peppers plus the chesse. Anyway, this is a versatile recipe that you can change up any way you want to.
