Tuesdays with Dorie - Tiramisu Cake

This week we baked a cake flavored with the basic Tiramisu ingredients-espresso, brandy, and mascarpone cheese. I like Tiramisu and wasn't sure how well it would translate into a cake. Actually, it turned out reallly well; the cake was moist and tender and the frosting was delicious, with a mild coffee flavor.

I decided to make my cake into cupcakes, as I am baking some things for an animal fundraising event. Cupcakes are much easier to pass out. The recipe made about 15 cupcakes, and they baked up beautifully.

If you're not familiar with Mascarpone, it's the Italian version of cream cheese. It's a bit smoother, and less tangy than our cream cheese. It's lovely in desserts.

I'm not a coffee drinker, but I do like the flavor of coffee in Tiramisu. In the recipe, the cake layers are soaked in a syrup made from sweetened espresso and brandy. To get the same effect with my mini-cakes, I poked small holes in the cupcakes and poured some of the syrup over the top and into the holes.

  7. I love that you made this as cupcakes. Definitely easier to transport and distribute. And so pretty with that fluffy frosting and cocoa dusting on top.
