Smoky Cheddar Cauliflower


Cauliflower was on sale again. Yeah! I could eat some version of cauliflower just about every day.

This recipe was in the Raley's store magazine. Grocery store giveaway magazines sometimes have really neat ideas. I followed the recipe, except I added a bit of extra cheese on top of the cauliflower and baked it for a few minutes in a 350F oven until the cheese was melted.

4 cups cooked cauliflower
1/3 cup shredded sharp cheddar
2 tablespoons sour cream
1/4 teaspoon smoked paprika
1/4 teaspoon garlic salt
salt and pepper to taste

Mash the cauliflower until it is smooth, but still has some texture. Stir in the rest of the ingredients. Heat the cauliflower mixture in a microwave, or bake in the oven as I did, just until heated through and until cheese melts.

The flavor combination of the sharp cheddar and the smoked paprika works really well in this recipe.
