Barefoot Bloggers - Outrageous Brownies

This week we made Ina's truly outrageous brownies. They are dense brownies, not at all cake-like. They have so little flour in them that they taste similar to a flourless chocolate tart. They are super delicious, and I rarely say that about anything chocolate. I only made 1/2 the recipe since our freezer is bursting at the seams with frozen baked goods. I will definitely make these again, though. The recipe calls for walnuts, but I used pistachios and toffee bits. The bonus recipe for this month was Ina's lemon cake. I made 1/2 the recipe and baked cupcakes instead of a large cake. The recipe called for a syrup and icing, but I omitted both, and just topped the cupcakes with powdered sugar and a little coconut.

Again, another fabulous Barefoot Contessa recipe. The cake is not overly sweet, and has a huge fresh lemon taste. It is also very light and moist. This cake would make a nice hostess gift, or would be great as an easy summer dessert.

  5. Both of these treats look fabulous! I do love a nice refreshing lemon cake, but I won't lie: I'm a chocolate girl at heart. These brownies look outrageously delicious. Man oh man, I would love to get my hands on one of these. Guess I'll just have to make them!
