

The bonus recipe for this month was Ina's lemon cake. I made 1/2 the recipe and baked cupcakes instead of a large cake. The recipe called for a syrup and icing, but I omitted both, and just topped the cupcakes with powdered sugar and a little coconut.
Again, another fabulous Barefoot Contessa recipe. The cake is not overly sweet, and has a huge fresh lemon taste. It is also very light and moist. This cake would make a nice hostess gift, or would be great as an easy summer dessert.
