White Chocolate Coconut Pistachio Bars

This is one of those super simple bar cookie recipes, made special by using white chocolate and pistachios instead of the usual milk chocolate and walnuts. These bars are very sweet, so I suggest cutting them into small portions.

1 1/2 cups graham cracker crumbs
1/2 cup butter or margarine, melted
14 ounces sweetened condensed milk
12 ounces white chocolate chips
1 1/3 cups flaked coconut
1 cup raw pistachios

Preheat oven to 350F. In small bowl, combine graham cracker crumbs and butter; mix well. Press crumbs firmly in bottom of a 13 x 9-inch baking dish.

Pour sweetened milk over crumbs. Layer evenly with remaining ingredients; press down firmly with a fork.

Bake 25 minutes or until lightly browned. Cool. Cut into bars.

  3. Very sweet bars are good by me. I love a nice coconuty, white chocolate bar. And easy to make? Even better. In fact, I might have to make these tonight!
