Vegan Tuesdays - Super Simple Salad

Today was hot. Really hot-almost 100 degrees. I did not feel like doing any cooking since I just didn't want to heat the house up anymore. I made this salad in about 10 minutes flat, which still took about all the energy I had to expend. I had a salad like this awhile ago at a pot luck, and I found it to be tasty, and simple. You can use any veggies or ingredients you like, but this is what I had on hand. Green onions would be nice, as would bell peppers, carrots, or edamame.

Ramen Salad

1 head of cabbage finely diced
1 can of water chestnuts, sliced
some nuts, I had walnuts
1 package of ramen soup (the oriental flavor is animal-free)
canola oil
vinegar, your favorite flavor
salt, to taste
pepper, to taste
hot sauce, a few drops
sweet chili sauce, about a spoonful
dark sesame oil, a few drops

Mix the cabbage with the water chestnuts, broken up ramen noodles, and nuts. Sprinkle the ramen flavor packet over the salad. Add vinegar and oil to salad in whatever proportion you like. Add the rest of the seasonings and mix well. Let sit a bit before eating. See...simple!

I do love hot weather but I was not expecting it so soon! Next week it is supposed to be cold and gloomy again, so I may be making a big pot of soup for Vegan Tuesdays.

  1. Mmm, this salad looks awesome. I'm all about a quick, easy, and delicious dinner. In fact, I can't say it's been 100 degrees here, but it has been about 90. That means, I don't want to turn on my oven at all, if I don't have to. Can't wait to try this!
