POM!


I love all things pomegranate, and so I was very excited to get an e-mail from the good people at POM, asking if I'd like some free juice to try. Score! I adore POM juices. They sent me a box of their delicious pure pomegranate juice, and though I drank most of it just straight up because it is so delicious, I did use the juice to make a dessert and some special drinks.

I made vegan "jello" using the POM juice mixed with apple juice. The apple juice was for a bit of sweetness. All I did was follow the package instructions for the vegan jel stuff. I cut the jello into cubes and served it with cream of coconut. (Cream of coconut is not coconut milk; it is sweetened. You can usually find it near the liquor as it is used in tropical drinks.) The jello was so delicious, and vegan, so I was pretty excited all around.

I made some green tea and mixed it with the POM and some lemon. I like unsweetened tea, but you could certainly add some sweetener.

And...for the cocktail-loving crowd, (ie. Dave and our neighbor), I made some Pomegranate-Key Lime Vodka Cocktails. I found the recipe in Cooking Light.

1/4 cup sugar
1/4 cup water
1 cup club soda
1 cup POM juice
1/2 cup vodka
3 tablespoons key lime juice

Combine sugar and water in a small saucepan; bring to a boil. Reduce heat, and simer 2 minutes, just until sugar dissolves. Remove from heat and cool.
Combine sugar syrup, club soda, POM juice, vodka, and lime juice. Place some crushed ice in a martini shaker; add about 1/4 of the drink mixture. Cover and shake. Strain into a glass and add ice if you so desire. Repeat. Garnish with lime.

  2. I love pomegranate, my mother would always get fresh pomegranates from the local South Asian store when I was a little kid. It would take us ages sucking the juice from the seeds. I love the idea of jelly, I will try this the next time i have my not so small nephews up, but the cocktails I will try pretty soon.

    mangocheeks- I love fresh pomegranates too, but they have such a short season here. You can also make pomegranate jelly "candy" with pectin, if you have that available. the cocktails were a big hit!

  10. Mmm, your POM cocktail sounds totally refreshing! And you have me intrigued by your jello. I'm usually not a big jello fan, but the idea of pomegranate jello actually sounds super interesting! I think I'm going to have to try it!
