Cauliflower!


Dave and I both love cauliflower and so I make it frequently. Here are a few recent cauliflower creations.

Roasted cauliflower and carrots: Cut carrots and cauliflower into pieces. Place in a big baking pan. Drizzle with a bit of olive, and season with salt and pepper. Roast in a 375F oven, stirring frequently, until the veggies are tender. I like this plain, but if you want, you can make a quick cheese sauce. Yummy comfort food-cauliflower and pasta with fresh ricotta. I think white foods make great comfort foods because you know what to expect. The odds are that you won't find some strange, unpleasant ingredient lurking in your mashed potatoes, or buttered rice. I cooked pasta until it was just al dente. While it was still hot, I add a pat of butter, a little salt and pepper, and some fresh ricotta cheese. I topped the dish off with roasted cauliflower and a bit of shaved Parmigiano Reggiano. So good!

For an amazingly fast cauliflower dish: Boil cauliflower florets until just tender. Mash with a bit of butter, salt, pepper, some parmesan, and a little cream. This tastes almost like mashed potatoes; you may be able to entice your children to eat veggies cooked this way.
