Orange-y Floating Islands for Tuesdays with Dorie


Admittedly, I was not very excited about this weeks recipe. My two least favorite dessert components are meringue and custard since I find them much too eggy-this recipe has both. Since I really didn't want to miss a week in my first month of being a Tuesdays with Dorie baker, I went ahead and made the floating islands, though I flavored the custard with orange. After the custard was done cooking, and before straining it, I added orange oil instead of vanilla, and about 1/2 cup orange marmalade. I mixed the custard well, and then went ahead and followed the rest of the recipe.

Instead of cooking all the meringue islands, I cooked just a few and then used all the rest of the meringue, plus the two additional egg whites, to make a pavlova with strawberries. (I'll post the recipe later.) I used the remaining custard, and the milk used for poaching, to make ice cream-a chocolate orange ice cream.

I didn't actually taste the floating islands, again, much too eggy for me. Dave did eat it, and he said it was good, but he really loved the chocolate orange ice cream.

So there you have it...orange flavored floating islands with a side of chocolate orange ice cream and a strawberry pavlova.
