
Crepes:
1 cup milk
1 teaspoon baking powder
1 teaspoon ground cardamom
1/4 teaspoon salt
2 eggs
2/3 cup all-purpose flour
2 tablespoons very soft butter
Whip the eggs, butter, and milk together. Add the dry ingredients and mix well. Let the batter sit for several minutes. Cook the crepes in a buttered crepe pan or saute pan over medium heat, turning once.
For the apples: I cooked sliced, peeled apples in a saucepan with some apple juice, a little butter, a little sugar, a pinch of ground cloves, some cinnamon, and 1 piece of star anise, until they were very soft. The apples would also be very good over ice cream or pancakes.
