Southwestern Salad

This salad was inspired by a recipe I saw in "Smoke & Spice" by Cheryl and Bill Jamison.

After all the candy we ate for the holidays, Dave and I were craving salad. This is a big, hearty salad that is big enough to have as a meal. You can add pretty much anything you want, this was what I had in the fridge. If you want this to be vegan, just use tortilla chips instead of the fritos, and leave out the cheese.

Here's what was in my salad:

bibb lettuce
red onion
chili cheese fritos
smoked cheddar cheese
black olives
pine nuts
tomatoes
avocados
pepperoncini

I made a simple lemon juice and olive oil dressing.

It was a really yummy salad. Veggies! Yeah!
