Cashew Date Bark

I will not be able to fix my computer until I receive the installation disks from Dell. In the mean time, my computer works most of the time, but I am limited in what I can do. Hopefully, I'll have the disks by the weekend!

This recipe is originally from the Barefoot Contessa show, but I adapted it since I had different ingredients on hand. It is so simple to make and takes only minutes. This would make a nice gift.

Here is the original recipe. I used dates instead of apricots and cranberries.

9 1/2 ounces very good semi-sweet chocoalte, finely chopped
8 ounces very good bittersweet chocolate, finely chopped
1 cup whole roasted, salted cashews
1 cup chopped dried apricots
1/2 cup dried cranberries

Melt chocolates in a heat-proof bowl set over simmering water.

Meanwhile, line a baking sheet with parchment paper. Using a ruler and a pencil, draw a 9 x 10-inch rectangle on the paper. Turn the paper face down on the baking sheet.

Pour the melted chocolate over the paper and spread to form a rectangle, using the outline. Sprinkle the nuts and fruit over the chocolate. Set aside for two hours until firm. Cut the bark into 1 x 3-inch pieces and serve at room temperature.
