Veggie Stromboli

Stromboli is basically pizza dough, rolled up around a filling. I love it because it is easy to make and is much more portable than regular pizza. It makes great lunches and snacks.

For this version I rolled out some pizza dough into a large rectangle. I usually buy premade pizza dough from Trader Joe's, or a I make a big batch and freeze individual portions, defrosting one portion each time I make a pizza. I covered the dough with a thin layer of cooked spinach, some olives, diced roasted red peppers, and some grated gouda cheese. I rolled up the dough, and pinched all the edges to make sure they were sealed. I baked the stromboli in a 350F oven for about 30 minutes, until it was golden brown. Make sure you let it cool a bit before slicing, though it's hard to wait because this is just so yummy.
