Deep Fried Zucchini Strips

I made these zucchini sticks to accompany veggie burgers for a dinner last week. They are good, though a bit time-consuming to make. The recipe comes from www.recipezaar.com.

1 medium zucchini
2 large eggs, beaten
2 tablespoons whole milk
3/4 cup all-purpose flour
1/2 teaspoon seasoning salt
3/4 cup cracker crumbs (saltines)
2 cups oil for frying

Wash and trim zucchini. Cut into long strips.

In a medium bowl, beat eggs and milk until fluffy.

In a plastic bag, add flour, seasoning salt and shake well.

In a separate bag, add cracker crumbs.

Dip zucchini into egg mixture.

Drop into flour and shake well to coat.

Dip into egg mixture again.

Drop into cracker crumbs and shake well to coat.

Heat oil to 325-350F in a very deep fry pan.

Drop zucchini sticks, a few at a time, into hot oil and cook until lightly browned. Do not overcook. Be careful of hot oil splattering.

Serve with ranch dressing or marinara as a dipping sauce.
