Simple Veggie Dishes


Here are a couple simple veggie dishes that even non-vegetarians will love. I steamed cauliflower until it was just tender; if you don't have a steamer you can boil it. I also steamed some Brussels sprouts and some small red potatoes. I put the cauliflower, Brussels sprouts, and half the potatoes in a large roasting pan. I drizzled olive oil over the veggies and seasoned them with salt, pepper, and a little hot sauce. I roasted them in a 400F oven until they were lightly browned. So yummy! You can serve veggies made this way plain, or you can serve them alongside rice or pasta.
To make the fried potatoes: Use parboiled potatoes, cut each potato in half and pan fry in oil until browned and crispy. Drain on paper towels. These potatoes are good for dinner and also for breakfast.
