Corn and Bean Salad

This salad is SO good. It's not that it's a very original recipe or anything, it's just the flavors marry so well. If you want to make this vegan, just use baked, pre-flavored tofu.

I used halloumi cheese. Halloumi is a Greek-style cheese that has a texture similar to mozzarella. It has a mild flavor but it's a bit salty. Halloumi doesn't melt when heated so it is wonderful for grilling. Grilled halloumi and warm, toasted pita is a yummy treat. If you can't find halloumi you can use mozzarella or provolone.

16 ounces frozen corn, defrosted
8 ounces diced halloumi
about 10 ounces frozen edamame, defrosted
1 can garbanzo beans, drained
1/4-1/2 cup finely diced roasted red peppers
olive oil, apple cider vinegar, salt, pepper, to taste

Just mix everything together and enjoy!
