
I've never even tasted corned beef so I've never had an official reuben. This veggie version is really yummy though, and one of my favorite sandwiches. I like it open-faced best, heated in the oven so that the cheese melts. It's very simple to make-rye bread, a little spicy mustard, aged swiss cheese, sauerkraut, and Thousand Island dressing. You could also add some fake meat-something like Tofurky slices, they have a bit of a smoky flavor. Serve these sandwiches with some chips and a big dill pickle.
One of the blog readers suggested using sauteed portobello mushrooms for the "meat". Great idea! Tempeh would also be a good addition.
