Vegan Cherry "Jello" Parfaits

The photo doesn't do these parfaits justice. They were so delicious. All I want to eat is vegan cherry jello parfaits. You can use any juice to make these except pineapple. Pineapple juice does not work with vegan gel products. I used 100% organic cherry juice that I bought at Trader Joe's. It's an amazing juice that tastes like a bowl of cherries in your mouth. The vegan gel product is available online from http://www.veganessentials.com/. Even if you're not a vegan or a vegetarian, I highly recommend making your own jello from pure juice. It's so much better than the packaged products, and with no added sugar. Much healthier.

Bring two cups of juice up to a boil. Pour into a bowl. Add 1 package of vegan gel. Mix until gel is dissolved. Pour into serving glasses but only fill half-way. Chill in the fridge. To get the gel to set at an angle, I propped the glasses at about a 45-degree angle in a deep baking dish. I used a dish towel to hold the glasses steady. When the "jello" was set, I filled the glasses with a non-dairy topping that I found at a health food store. You could use Cool Whip, or whipped cream. Make plenty of these because they will go fast!
