Stuffed Potatoes

Dave is crazy about potatoes. He eats them baked, boiled, fried and mashed. This recipe turns a simple baked potato into a more substantial dish. You can serve these with a salad and make a meal. There is no specific recipe for these. I took warm baked potatoes and scooped out the insides, leaving the skins intact. I mixed the potato with a little sour cream, some cheddar cheese, a small amount of goat cheese, salt, pepper, paprika and poppy seeds. I stuffed the skins with the filling and baked them in a 350F oven until the cheese melted, about 20 minutes. Yum!
