Dave is on a fudge kick. He has been craving sweets ever since I made the chocolate fudge a couple weeks ago. I've never made peanut butter fudge before but this recipe sounded so simple I thought I'd try it. I was worried that it would be too sweet to eat, but it's actually quite good. You just need to cut it up into small pieces. Alton's original recipe calls for melting the butter and peanut butter in the microwave, but since I don't have a microwave I used a saucepan on very low heat. It turned out fine. This fudge would make a nice holiday gift.
1 cup butter
1 cup peanut butter
1 teaspoon vanilla
1 pound powdered sugar
Melt the butter and peanut butter together, either on the stove or in the microwave. Add the vanilla. Add the powdered sugar to the butter mixture and stir with a wooden spoon until well mixed. Pour into a buttered 8 X 8 pan. Cool. Once cool, cover well and refrigerate.

Kristy- No microwave, or toaster, or coffee maker. I like to keep my counters empty. I make popcorn the old fashioned way in a pot, and for boiling water I use an electric kettle. Leftovers go in the oven.ReplyDelete
