My Version of Chilaquiles

Chilaquiles are fried tortillas, (tortilla chips), cooked in salsa. I made three versions; one with a fried egg and cheese on top, one with some refried beans which is a vegan version, and one topped with sour cream and cheese. To me, chilaquiles = comfort food.

To make the homemade salsa I added a big can of peeled, whole tomatoes to a blender along with a few fresh tomatoes and a couple of fresh chilies. I pureed everything and then cooked the salsa in a saucepan for about 20 minutes. For the seasoning, I used some hot sauce, some very finely diced onion and salt.

When the salsa was ready, I put in a bunch of tortilla chips and let them cook until they were soft. Right before serving I added some more tortilla chips, this gave me both the crunchy chips and the soft chips. It makes for a nice texture.

You can top this with anything you like: chopped onion, avocado, olives, etc.
