I am still playing catch-up... homemade granola

I am still a bit overwhelmed with cats and kittens but I've had time to do a bit of cooking. Our fridge is pretty bare so I've been creative and am using up the stuff we have on hand. I need to do a gigantic grocery shopping but just haven't felt like it.

I had some oatmeal on hand and also some leftover grated fresh coconut, so I thought I'd try my hand at making granola. You can make granola with any dried fruits, nuts, or seeds you have, but this is what was available to me.

A few cups of oatmeal
A couple cups of grated coconut
A couple cups of walnuts
Some finely diced dried nectarines
Apricot jam as a sweetener
Oil
Sugar
Cinnamon

I put the oatmeal, coconut, walnuts, and nectarines in a big bowl. I added just a little oil to moisten everything, some cinnamon, a couple tablespoons full of sugar, and about 1/2 jar of apricot jam. I mixed everything together and spread it out on a baking sheet, in an even layer. I baked the granola in a 350F oven until it was lightly browned, about 25 minutes. Surprisingly, this turned out to be delicious. Store any leftovers in a sealed container.
