Goat Cheese Tortilla Roll-ups

This is one of Dave's favorite lunch foods. They only take a few minutes to make, no actual cooking is involved. The quantities all depend on how many tortillas you want to make and how much filling you like; I only like a tiny bit of filling but Dave likes lots.

These are the basic ingredients but you can substitute or add anything you have a taste for. I sometimes use black olives and grated carrots instead of the roasted peppers. Also, you can make these without the goat cheese and just use cream cheese.

Filling:
Softened cream cheese and softened goat cheese (about 60% cream cheese to 40% goat cheese)
Diced roasted red peppers, I used the ones in a jar this time
A small pinch of salt and a little pepper
Chili powder and paprika to taste

Flour tortillas

Mix all the filling ingredients together and spread some on each tortilla. Roll the tortillas up tightly. You can cut each tortilla into slices and serve these as appetizers.
