Cauliflower with Sour Cream and Poppy Seeds

This is an easy way to make cauliflower and is very good served over noodles or any kind of pasta.

1 head of cauliflower, cut into florets and boiled until just tender and drained
1 - 1 1/2 cups sour cream
A couple tablespoons of butter
About 1/4 cup milk
1/2 cup shredded sharp cheddar cheese
Poppy seeds to taste
Paprika, salt, pepper, to taste

Mix the sour cream, butter, milk, cheese, poppy seeds, paprika, salt, and pepper with the hot cauliflower in a saucepan. Heat over low heat, stirring frequently, just until the cheese is melted and the sauce comes together. Serve with noodles or rice.
