
I peeled and diced the apples and cooked them along with some fresh grated coconut in a big pot with some orange juice, a small amount of sugar, and some cinnamon. You want this to turn out like a thick, chunky applesauce, so just add enough juice to keep the apples from burning. Add more juice every time the pot gets dry. I cooked the apples until they were very soft. When the apples were done I added some walnut halves.
Add the fruit mixture to cooked oatmeal. Such a yummy breakfast - apples, coconut, orange, and walnuts.
I just had to tell you that I love the way you always use up your aging fruit and never throw it away! That is awesome! I must confess when my fruit starts turning, I have been known to throw it out :( You have inspired me to find a use for it.
ReplyDeleteI have such an aversion to wasting things, especially food. I'm not sure why that is; I don't think we were forced to "clean our plates" as kids. Unless something is hairy-moldy I will try and use it.
