Banana Pecan Pancakes

As I mentioned before, I am not a huge banana fan. They are OKAY, but I rarely eat them. Dave is a banana fanatic and he frequently gets over excited and buys more bananas than he can eat before they spoil-especially if they are on sale! We had a big bunch of bananas that were fading fast and so I decided to make banana pancakes. I used a mix I had on hand, (you can find vegan mixes online), or you can just use your favorite recipe. I smooshed all the bananas with a potato masher and added them to the prepared pancake mix with a little extra sugar. I also add a bunch of pecans. The batter ended up being so heavy with all the bananas and nuts that the pancakes were almost impossible to flip. They came out rather messy but they tasted really good-at least according to Dave. Much too banana-y for me. They can be served with just powdered sugar since they have so much flavor already.
