Vegetarian/vegan fajitas


These fajitas are fabulous and something non-vegetarians should enjoy. If you have the ingredients on hand you can whip up this very impressive meal in about 45 minutes.

I prefer to eat these without any dairy products but my husband likes sour cream and cheese.

2 red onions, sliced
4 bell peppers sliced into strips
olive oil
salt
pepper
fajita seasoning or a mixture of chili powder, cumin, garlic powder, onion powder, paprika, to taste
2 cans of pinto beans, rinsed and drained
3 -4 avocados, peeled and diced and sprinkled with the juice of two limes
1 can of black olives, drained
tortillas, warmed
sour cream (optional)
Mexican white cheese or grated cheddar (optional)
tortilla chips (optional)

Saute the peppers and onions in olive oil in a big skillet until tender. Add some water if the pan gets too dry. While sauteeing, add salt, pepper and fajita seasoning, all to taste. At the same time, heat the pinto beans and a few splashes of water in a saucepan with salt, pepper and some fajita seasoning. Once the veggies and the beans are cooked, lay out all the ingredients and let people help themselves.

So yummy!
