Using the spoils from the farmer's market



Here are a few of the things I made using the fruit and veggies from the farmer's market. The fruit salad includes an amazing melon that I neglected to get the name of, pineapple and white nectarines. It was a perfect mix of tangy and sweet.

I made a huge pot of marinara-like sauce and used it on the green beans and on the French bread pizza. I had so much sauce that I froze a bunch to use later with pasta. To make the sauce I diced some zucchini, eggplant, an onion, bell peppers and fresh tomatoes. To the vegetables I added a couple cans of tomato paste, some water, and a big can of Italian crushed tomatoes. For seasoning I added salt, pepper, a little garlic, a little celery salt, some oregano, and some hot sauce. I cooked the sauce in a big pot over low heat for a long time until the vegetables became really soft and the sauce thickened. Yum!
