The beets we bought at the farmers market were fantastic, extra sweet and tender. I used them in a salad with green beans, homemade croutons, olives, eggs, nuts and cheese. I also sauteed some leftover roasted beets with steamed green beans and topped them with a little melted butter and poppy seeds. This was really good. For a snack we had leftover roasted beets, French bread and olive hummus. To make the olive hummus I just mixed a bunch of olives into store bought hummus. Yum!
