Beer and cheddar fondue

Of all things, in the 100 degree heat, my husband was craving fondue. I actually prefer fondue made with beer as opposed to wine as I think the flavor of the wine is sometimes overwhelming. This is a very fast fondue to make and if you don't have a fondue pot you can use a heavy saucepan and keep the cheese warm over a super low heat. Serve this with steamed veggies, breads, and apples.

16 ounces shredded sharp cheddar cheese
1 tbsp flour
1-2 tbsp spicy brown mustard
Dash of hot sauce
3/4 cup good quality beer

Heat the beer is a heavy pan or a fondue pot on low until simmering. Mix the cheese with the flour. Slowly add the cheese, a bit at a time to the beer. Stir constantly with a wooden spoon until the cheese is melted and smooth. Add the mustard and hot sauce and stir. Keep the cheese warm over a low heat.

I think this makes enough for 3-4 as a main dish or for even more people as an appetizer.
