Veggie burger - my favorite version


Like most people, we love burgers. I've tried dozens of veggie burger recipes and this is my current favorite. It is a rather wet mixture so I don't think you could cook them on the grill. Maybe, if you are a super grillmaster, you can figure out a way to keep them from falling apart. I usually cook them on my panini press. The weight of the press makes for a thin burger but you can always have two patties per sandwich. They can also be baked in the oven.

If you're not a kidney bean fan, by all means substitute another bean. I just happen to love kidney beans.

The recipe is my best estimation of the measurements I use when I make these. If the burgers are too wet, add a bit more flour.

2 cans kidney beans, drained and rinsed
1/2 cup oats
1/2 cup walnuts
1/2 an onion, diced
splash of oil
1/8 cup flour
Splash of water (as needed if mixture is too dry)
Tiny pinch of celery salt and chili powder
Few drops of hot sauce (to taste)
Salt and pepper, a big pinch of each, but this is really to taste
About a teaspoon of paprika

Process everything in the food processor until mixed but still a bit chunky. I put the mixture in the fridge for a bit to firm up, otherwise it is hard to form patties. I cook the burgers on my panini press. They take about five minutes.

This recipe makes about six burgers.
