Roasted chickpeas

The first few times I tried making these I cooked them too long and they were dry. They pretty much made me choke. Several people mentioned to me how much they love roasted chickpeas, but I could never understand why. I decided to try this recipe one more time, because in theory, roasted chickpeas sounded delicious. I am so glad I persevered, these are wonderful. A great snack.

Recipe:
1 can of chickpeas rinsed and dried
a small sprinkle of salt
some Tamari
a few drops of dark sesame oil
a little olive oil

Mix everything together and roast at 350 degrees for about 25 minutes. I shake the pan a couple times during the cooking. Be very careful not to over-cook! In your oven 25 minutes may be too long.

  1. I tried making roasted chickpeas yesterday and found mine were dry rather than crunchy - although I loved the flavor! So, I googled to find out how other people were getting them *crunchy* and came across your blog (via flickr). I look forward to reading your other vegetarian recipes! YUM! (BTW, I am also an animal-lover; see kitsnk9s on blogspot). Thanks for posting all these recipes AND the great photos -- wonderful encouragement to give the recipes a go! LOL
