Fresh peach cobbler


Filling:

4 cups peeled, sliced peaches

3/4 cup brown sugar

1 teas. cinnamon

1 teas. vanilla

1 teas. flour


Cobbler:

1 cup flour

1 teas. baking powder

1/2 teas. baking soda

3 tbl. brown sugar

4 tbl. butter, cut into small pieces

2/3 cup buttermilk


Preheat oven to 425 degrees.


Butter a 1 1/2 quart baking dish. Mix all filling ingredients and pour into pan. Bake for 10 minutes.


Combine dry cobbler ingredients. Cut in butter until texture resembles coarse crumbs. Add buttermilk and mix to form a dough.


Drop spoonfuls of dough on top of fruit. Bake until fruit is bubbly and crust is golden brown, about 20 minutes. Serve with whipped cream or ice cream for something extra special.
