Chantilly Rice


This is one of my most requested dishes and yet it is so simple it doesn't even take a recipe. I saw the original recipe in a magazine about twenty years ago. I think it was an advertisement for rice growers or something like that. It is so good I've been making it ever since. The quantities are all to taste and you can make an endless number of substitutions - different cheeses or the addition of cooked veggies or fresh herbs.

cooked rice, I like Basmati
sour cream
grated sharp cheddar
salt
pepper

Mix the rice with some sour cream and grated cheddar. Season with salt and pepper. Put into a casserole dish and top with a bit more cheese. Bake until heated through and cheese melts.

This is rather like a rice version of mac and cheese, total comfort food.

  1. Thanks for this recipe Michele. We were having a vegetarian friend over for lunch yesterday and I got some great ideas from Michele. This is one of the recipes I made and all the guests loved it, vegetarian or not.
