BBQ veggies

After spending the day swimming, my husband and I were really hungry and we wanted something with lots of veggies. I came up with this after going through the fridge. It's so simple and really tasty. Of course, you can use any veggies you like. It would be good served with rice or even as a sandwich.

3 zucchini
1 onion
1 bell pepper
8 ounces mushrooms
5 Tbl. BBQ sauce
sprinkle of salt
sprinkle of pepper
little celery salt
splash of oil
a little cumin
a little lemon juice

Cut all the veggies into chunks. Add the rest of the ingredients and mix. Roast in the oven at 375 degrees until the veggies are just tender.
